Around the holiday, I start out three things on my mentality: family presents, and food, specifically my grannies tamales. E really year my grandma, mom, sister, dad, uncle, and I sit down to chip in tamales. My grandmas lovely tamales have so many flavors. My grandma starts by make a red chili Colorado sauce and a green chili Verde. To cook the meat in. Next its our turn to spread out the masa a type of give dough, which we spread on corn husks. We act like a well oiled machine doing our jobs quickly and efficiently. After scatter the masa someone puts the right amount of sauce. Then my sister and I go to work wrapping the tamales in foil and freehanded them to my grandma to put in the pot to cook.
Without the meat sauces my grandma uses the tamales would be bland and tasteless. When she makes these sauces that go into the tamales she has to take time and wield or they would not turn out the right way. To make the red Colorado sauce she first has to boil a pot of water filled with pasilla chilies and either California or New Mexico which ever she can find. For the green sauce she fills a pot with water Serrano chilies and tamatio. Both of the sauces have to cook by themselves for xxx minutes.



Then my grandma adds shredded pork to both sauces close the lid and let it cook for another thirty minutes so the meat can soak in the flavor.
This is a tradition we have had for many years as long as I can remember. My grandma is unendingly teaching us virtually our heritage. She is very picky about tamales, and she has reason to her tamales are some of the best I have ever tasted. My grandma takes pride in everything she does she has very mettlesome standards and likes things very clean. She is a very kind person and is willing to help someone who needs it.
